The Palliser Estate Martinborough Methode Traditionnelle is arguably the best sparkling wine of the Wairarapa, with a long history of success and many top awards behind it. The style is a demanding one to make at the top level, requiring careful and sophisticated winemaking as well the patience, and indeed financial luxury, of aging the wine on lees to gain autolytic character and complexity before release. The prerequisite is high quality fruit picked early to retain acidity and fruit delicacy, and Palliser Estate is well-resourced with sufficient vineyard holdings to devote to the production of the wine. Here, I review the latest release of Palliser Estate methode traditionelle from the 2014 vintage. It is still very taut, but shows immense focus. It will develop in the bottle. www.palliser.co.nz
