The Methode Traditionnelle style is one that requires serious commitment by the winemaker in terms of technical input, intricacy, balance and a sense of how componentry develops to come together in harmony, and by the owner in terms of finance tied up without giving an immediate return. Palliser Estate has always made the Wairarapa’s best sparkling wine, and it stands tall with methode traditionnelle wines from anywhere in the country, having won more than its fair share of top awards.
