Greystone 2015 ‘Sand Dollar’ Pinot Gris and Riesling

One of the Waipara Valley’s star producers, Greystone Wines has been subtly evolving the style of their wines over the past few years. Viticulturist Nick Gill, winemaker Dom Maxwell and sales and marketer Nik Mavromatis have taken the approach of leading the market rather than responding to it with the making of increasingly sophisticated wines. The white wines are grown and made for elegance and delicate textures and complexities, the winemaking incorporating the sensitive use of indigenous yeasts, oak for fermentation and maturation, and lees contact. This is a significant step away from the pristine and up-front, varietally-pronounced wines first made. The current wines require a little more thought and understanding, but reward those who take the time and make the effort to do so. They still, however, retain the clear-cut varietal expression that they exhibited from the start, now with beautiful and intricate extras.
