  Very pale salmon-pink colour with eye-of-the-partridge hues, lighter on the rim. The nose is fresh with softly full aromas of white stonefruits infused with red floral nuances and subtle nutty and thirst-quenching mineral notes. The nose shows elegance and builds in depth with aeration. Dry to taste and medium-bodied, the palate has an elegantly concentrated core of white stonefruits with subtle nuances of red florals, along with nutty lees and mineral elements. The mouthfeel is crisp and refreshing with brisk acidity, balancing the light, dry-textured phenolics. The wine carries with good energy and linearity to a dry, racy finish with mineral nuances. This is a classical dry Provencal rosé with delicate stonefruit and floral flavours with mouthwatering nutty and mineral notes. Serve as an aperitif, with antipasto and tapas over the next 2 years. A blend of 60% Cinsault and 40% Grenache. Given a few hours skin contact and whole bunch cool-fermented in stainless-steel to 13.0% alc. and dryness, the wine aged on lees with no MLF.   Dark, deep ruby-red colour with slight purple hues, a little lighter on the edge. This has a softly packed nose with dense aromas of ripe and aromatic dark raspberry and blackberry fruit harmoniously melded with garrigue herbs and some earth and game elements. Medium-full bodied, the palate has rich and sweet flavours of savoury blackberry and raspberry fruit intermingling with earth and garrigue herb notes. The palate has good depth and density with ripe tannin structure in support. The palate grows in flavour depth and robustness, with good acidity enlivening the mid-palate. The wine carries to a fine, firm finish of dark fruits and herbs. This is a rich and flavoursome Cotes du Rhone Villages with dark red and blackberry fruit with game, herb and earthy interest on a moderately robust palate. Match with roast game meat dishes over the next 4-6 years. A blend of 50% each Grenache and Syrah, from the southern Rhone, fermented to 14.5% alc. the wine aged 9 months in seasoned large format French oak.   Even ruby-red colour with slight purple hues, paler edged. The nose is elegantly proportioned with good intensity of bright red cherry and raspberry fruit lifted with red florals. The aromatics unfold to reveal a tight core of dark herbs and subtle earthy notes. Medium-bodied, the palate has a sweetly rich and elegantly concentrated palate of red cherries and raspberry fruit with herbal detail. The mouthfeel is fresh and vibrant and flows with good energy and modest tannin extraction providing a gentle backbone. The wine carries to a fine, concentrated, lingering finish. This is a finely concentrated Tempranillo with bright and vibrant cherry and raspberry fruit on a light-textured palate with lingering aromatic nuances. The nose is gently full and voluminous with softly packed aromas of vibrant, dark plum fruit with red floral and spice notes building to form a fine core with aeration. Medium-bodied, the palate has vibrant and intense flavours showing dark red berry and plum fruit entwined with lifted florals and spices, with an elegantly proportioned heart. The mouthfeel has fine tannin extraction with fresh, balanced acidity, and the wine leads to a taut, dry finish. This is an elegant and fragrant Malbec with red berry and plum fruit lifted by red floral and spice notes, on a fine-textured palate.   Bright, light lemon-hued straw-yellow colour, paler on the rim. The nose is fine in concentration with fresh, gently packed aromas of yellow stonefruits and citrus fruits harmoniously entwined with nutty oak. The aromatics are bright and vibrant. Medium-full bodied, the palate has a taut but concentrated heart of yellow stonefruits and citrus fruit, along with nutty and spicy oak notes. The mouthfeel is bright and lively with brisk acidity which carries the wine along a fine, textural, threaded line leading to a lingering citrussy finish. This is a bright and refreshing Chardonnay with stonefruit and citrus flavours along with nutty and spicy oak on a brisk palate with a fine line. Serve with grilled and roasted seafood and poultry dishes over the next 3+ years.   Dark, moderately deep ruby-red colour with youthful purple hues, a little lighter on the edge. The nose is firm with a fine concentration of ripe red cherry and raspberry liqueur aromas, entwined with bright red florals and a layering of nutty and spicy oak. Medium-full bodied, the palate has rich and sweet flavours of bright, ripe red cherry and raspberry fruit with an amalgam of red florals, dark herbs and nutty, spicy oak. The flavours show depth and form a well-packed core with supple tannin textures and balanced acidity. The wine is mouthfilling and carries easily to flavoursome finish of raspberries and spices. This is a flavoursome and rich cherry and raspberry-fruited Pinot Noir with a layering of spicy oak on a balanced palate with good structure and grip. Match with duck and pork dishes over the next 4 years.   Very dark, deep, near impenetrable black-red with purple hues, youthful in appearance. The nose is initially somewhat shy, but reveals a finem tightly bound core of blackberry and raspberry fruit with subtle notes of plums, boysenberries and liquorice, unfolding hints of black pepper and a little oak spice. Full-bodied, the palate ha a well-packed heart showing good vinous presence and weight. The flavours and restrained, but show ripe blackberry fruit with some dark raspberries, plums and liquorice. A little eucalyptus emerges with some cedary elements to provide richness. The plate has fine-grained tannin extraction and structure. The flavours bloom and carry to an elegant but firm, lingering finish of black fruits, liquorice and cedary oak. This Shiraz has vinosity and weight, but is a little restrained s=in showing the blackberry, raspberry and plummy fruit. Light, grainy tannins give good structure. Match with lamb, beef and venison over the next 4-5 years. 100% Shiraz, 85% from Langhorne Creek and 15% from McLaren Vale, hand-picked and fermented to 14.5% alc., the wine aged 9 months in seasoned French and American oak with 30% new French oak.   Full, even, dark, deep, near saturated black-red colour with purple hues. This has a softly full nose with good depth, showing rich, ripe blackberry and raspberry fruit with plum notes and complexing dark herb nuances at the core. Full bodied, the palate has a deeply packed heart with blackberry fruit with soft raspberry and boysenberry notes, melded with complexing dark herbs. The palate has fine, grainy structure supporting the fruit with integrated acidity. The palate has good drive and linearity, and carries to a firmly concentrated, lingering finish of black fruits and dark herbs. This is a full, deeply packed Shiraz with ripe blackberry fruit with raspberry, boysenberry flavours and complexing dark herbal notes on a fine, but firm-textured finish. Serve with lamb, beef and venison dishes over the next 4-6 years. A blend of 92% Shiraz,. 4% Mataro and 2% each of Bonvedro and Graciano. 60$ from the Barossa Valley and 40% from the Eden Valley, hand-picked and fermented with 10% whole bunches to 14.5% alc., the wine aged 9 months in primarily French with some American oak, the 30% new oak being French.
