The making of late harvest and botrytis-affected dessert wines should be approached with considerable care and thought. The style of the wine must not be manipulated beyond what the fruit can support, and the balance of componentry is crucial to ensure a wine which is enjoyable. And while the style and quality of a dessert wines can be outstanding, the market is not a strong one for them, as such wines are consumed sporadically, rather than regularly in general. Making sweet wines when vintage conditions allow and when a producer’s stock situation is appropriately low is the preferred path. This is the situation at Charles Wiffen Wines, the previous wine being the 2009 vintage. A multi-gold medal winner, this is now followed by the 2015 vintage, a wine more in the ‘Late Harvest’ style rather than fully botrytised grapes.
