Earlier this year in February, I reviewed a range of wines under different labels with the commonality of having James Dicey as the man providing the viticultural advice. His role was in establishing the vineyards and maintaining the viticultural regimes best suited to the varieties planted at the different sites. Though different winemakers were involved, the quality of the fruit was evident, even in the newer wines. (Click here for the review of Bespoke Central Otago Wines.) As vines age, they come into greater balance with the soil, site and climate. And similarly with wines in the bottle. Evolution is the only constant, and it was pleasing to see wines submitted again to see how they had progressed with some bottle age. The Ceres wines are a collaboration btween Matt Dicey and Alison Holland with James Dicey and Odelle Morshuis, each couple owning a vineyard. www.bespokewines.co.nz
