Moderately deep dark red colour with lighter garnet hues on
rim. The bouquet is restrained and
mellow in expression with softly concentrated aromas of savoury red fruits
entwined with dried herbs, leather and game.
The nose has developed secondary complexities and interest. Medium-bodied, savoury secondary flavours of
red berry fruits infused with dried herbs, undergrowth and game show with some sweetness
and concentration. The tannin extraction
is light and balanced, providing a fine-textured line, and the mouthfeel
enlivened by elevated acidity. The palate
is brisk and carries through to a dry-textured finish. This is a moderately concentrated
Cabernet/Merlot blend showing savoury secondary development and a brisk
mouthfeel. Serve with slow-cooked game
meats and semi-hard cheeses over the next 3 years. 60% Cabernet Sauvignon and 40% Merlot,
hand-picked and hand-sorted, fermented to 12.5% alc., the wine aged 12 months
